Special Guests
Chef Murayama Yusuke
of Pas Mal

Chef Murayama Yusuke was born in 1977 in northern Japan’s Yamagata Prefecture, in a city called Sagae. After graduating from a culinary high school, he trained in restaurants in Yamagata and Tokyo before opening his own restaurant, Bistro Pas Mal, in Tendo City at the age of 25. After noticing that there were no authentic French restaurants in Yamagata City, the prefectural capital, he decided to relocate and expand his business. In 2017, Chef Murayama opened Restaurant Pas Mal, which specializes in sourcing local seasonal ingredients to create mouth-watering fusion dishes that blend traditional Japanese flavour with cutting-edge French techniques.
Via active collaboration with other restaurant owners and local farmers, Chef Murayama has created an entirely unique, border-crossing take on French cuisine. His innovative dishes have achieved worldwide recognition and acclaim for their artistry and flavour. In 2022, he was selected as a Focus Chef from a field of 550 restaurants across the country. In 2023, Restaurant Pas Mal was listed as a Top Three Great Restaurant in gastronomic guidebook Gault & Millau and made the Japan Times’ Top Ten Destination Restaurants List. More recently, Restaurant Pas Mal also won bronze at the Japan National Government 14th Ministry of Agriculture, Forestry and Fisheries Chef Awards Program.
Due to the originality and delectability of his recipes, Restaurant Pas Mal and Chef Murayama himself are fast becoming de rigour for gourmets in Japan. His dishes are redefining Japanese fine dining, blending heritage and innovation into a harmonious cuisine which delights the senses of any lucky enough to experience it. This event marks his first ever appearance in the United States.
Somaro Yamagata Maiko
Maiko, or trainee geisha, from Sakata’s Somaro teahouse will also be in attendance at the dinner. These young women are talented musicians, dancers, and conversationalists, who have trained for years in their chosen profession. Each one of them is a font of traditional Japanese cultural knowledge, and has dedicated her life to the continuation and propagation of quintessentially Japanese arts and culture. Enjoy their company this evening as they entertain you with their wit and charm.
