“villa aida” x “Jungsik” Food Workshop!
A one-day only exclusive event by two Michelin chefs; a conversation and culinary session will be held by Chef Kobayashi Kanji, owner and chef of villa aida (2 stars, Green Star, Asia’s 50 Best Restaurants 2024 35th place, We’re Smart World Best Vegetables Restaurants Japan 1st place, etc.) with guest Yim Jungsik, owner and chef of Jungsik (2 stars) in Seoul, Korea & Jungsik New York (2 stars) in New York, USA. Based around the theme “Worthless?”, by examining and bringing out the intrinsic worth of things often esteemed of no value, this is a rare event in which you can hear the thoughts of these two accomplished chefs on food and cooking.

Food culture forum with famous chefs
Thinking about local gastronomy with the Okitama Basin as the theme

The second Okitama food workshop event by Michelin chefs, featuring Chef Hajime Yoneda, Chef Takuji Takahashi, and Pastry chef Toshihiko Yoroizuka, along with Executive Director Takeshi Ninoyu. We will invite chefs from Tohoku and Niigata to a food culture forum to discuss their own “local gastronomy” with the theme of Takinami and the Okitama Basin.

You will be able to view the fantastic sea of ​​clouds from “Jubunichiyama”, which is about a 10-minute drive from Akayu Onsen.

You will get to see the growing environment of Yonezawa Beef (non-pregnant female cows with a growing period of 33 months or more), which meets the strictest standards for branded beef.

Okitama Symposium

Okitama Symposium Experience local gastronomy with ingredients from the Okitama Basin

The third Okitama food workshop event by Michelin chefs, experience the charm of ingredients from the Okitama Basin through a symposium with local gastronomy and guests. Featuring Chef Kanda Hiroyuki, Takefumi Hamada, and Masuhiro Yamamoto as symposium guests, Chef Harada and Chef Nakagawa will provide local cuisine with ingredients from the Okitama Basin.
This is a special evening where you can try these dishes and also have a deeper discussion about traditional cuisine and vegetables of the Okitama Basin in a symposium between chefs and guests.

January 19th

January 20th 
Optional: Snow radish digging tour, held after check out for guests who desire to participate.
Radishes were left in the fields under the snow intentionally instead of harvesting them in the fall. The ground does not freeze. This is the only program in the world where you can dig up radishes whose starch has turned into sugar and become sweet.
11:00-13:00: Zao’s frost-covered trees and ice waterfall tour
It is said that Zao’s frost-covered trees will not be visible in another 10 years due to global warming. See the world’s rare frost-covered trees, snow monsters and ice waterfalls (waterfalls that freeze as they fall). A spectacular spot to visit on a snow trek.

13:00: View Kumano Taisha Taitaikagura. After being passed down to Kumano Taisha, it was not permitted outside, so it is the oldest Kagura in Japan and can only be seen at Ise Jingu and Kumano Taisha.
