Work alongside Mrs. Horikawa, a longtime resident of Yamagata City who hosts a series of cultural workshops. The workshops are held in a beautiful traditional Japanese storehouse that has been in her family for generations.
Your English-speaking interpreter and prepared English materials makes this workshop very easy to enjoy with Mrs. Horikawa. Create tofu from scratch in a traditional Japanese storehouse
As you arrive at the Yamagata Chūō Post Office in Yamagata City, you will meet your English-speaking guide who will take you to Mrs. Horikawa’s private Japanese storehouse, where you will make your tofu.
Once you arrive, Mrs. Horikawa will welcome you into her Japanese storehouse, passed down many generations of her family. After experiencing her warm hospitality, she will provide you an explanation on how to make tofu from scratch. The green soybeans the tofu is made from are grown in Yamagata, allowing you to taste the local produce and unique flavor of Yamagata.
You will then boil, blend, filter, and set the tofu with different cooking techniques and unique tools to create the tofu into a block form with the guidance of Mrs. Horikawa.
As is typical in Japanese cuisine, no ingredients go to waste and you will also be working with the leftover soybean material that is filtered out when making the tofu. With this bean curd, you will make a variety of dishes with Horikawa-san that will be served in the meal after your workshop, which may include spring rolls, salad and miso soup.
Following the completion of your dishes, using gorgeous plates passed down Mrs. Horikawa’s family, you will enjoy a satisfying meal with the tofu and side dishes you created while chatting with Mrs. Horikawa.
