Kanenoi Shuzo’s signature line of sake, Wataya, is brewed with food pairing in mind. At Kanenoi Shuzo, the proprietors continue to carry on the founder’s mission of brewing food-friendly sake that they themselves find delicious. Starting with soil preparation; then rice, water, koji, and yeast, they are passionate about every element related to the creation of amazing sake.
Kanenoi Shuzo sake is brewed using water from the famous Kozo Sansui Spring of Kozo Fudo Falls, an essential element of Kanenoi’s sake brewing. On this private brewery tour, we invite you to visit for a tour of this incredible natural water source and the sake brewery. Afterwards, delight in the subtle flavors of this incomparable sake in a guided a tasting session with one of the sake makers.
Sample Itinerary
Start your tour with a visit the impressive Kozo Fudo Falls where Kozo Sansui Spring is located. The famous water gushing forth here is used to brew sake possessing refined aroma and sharpness. The relationship between Kanenoi’s signature brewing process and this indispensable water source will be introduced.
After touring the spring, return to the brewery. Learn the steps of sake brewing and the particulars of the brewing process for the Wataya line of sake by Kanenoi.
Wrap up your tour day with a guided sake tasting! Enjoy sake brewed from raw materials carefully selected by Kanenoi Brewery. For designated drivers and others (over 20 years of age) with circumstances preventing them from participating in the sake tasting, the brewery will offer a souvenir gift.
